We wanted to try making something healthy and found this recipe for lentil soup. It was our first time cooking with lentils but it was delicious!


lentil soup; brown lentils, onions, carrots, diced tomatoes, vegetable broth, water, lemon juice, cilantro, olive oil, salt, pepper, chili powder, ground cumin, garlic powder.


First, we chopped two carrots and one onion and sautéed it all in olive oil.


Then we rinsed one cup of brown lentils.


After the carrots and onions cooked, we added in the diced tomatoes, chili powder, ground cumin, and garlic powder.


Then we poured in the lentils, four cups of vegetable broth, and two cups of water. We let it boil, then reduced the heat to a simmer and let it cook until the lentils were soft.


We just love our dutch oven. ♥


We carefully transferred two cups of soup to a blender and blended it until it was smooth. Then we poured it back in the soup and let is sit just a little longer. We seasoned the soup with lemon juice, salt, and pepper.


When it was time to eat, we poured the soup over a bowl of rice and added fresh cilantro on top.
