We are trying to move towards a plant based diet in our attempt to eat less meat. This week, we saw rice paper at the market and ended up buying ingredients for simple spring rolls. The entire dinner cost less than $10 and it was fun to make together. ♥


spring roll; rice paper, noodles, lettuce, cucumber, carrot, bean sprouts, cilantro, green onion, lime, japanese style dressing.


For the ingredients, we chose vegetables with different textures. The cucumbers and carrots gave the spring rolls a nice crunch, and the noodles gave them some weight.


We picked ingredients that we both liked and that made sense together.



We dipped the rice paper in warm water until it became soft and put it on a small plate. It was interesting to see how we assembled the spring rolls.



Finally, we rolled them up and dipped them in more japanese style dressing as we ate.
