Here's our take on Tender Green's baby arugula salad.

baby arugula salad; arugula, fennel, lemon, parmesan cheese, olive oil, salt, pepper.


We used a mandolin to slice the fennel into thin slices. Absolutely love how it came out!


Then we tossed the ingredients together and added salt and pepper to taste.


And then we topped it off with grated cheese.


While the salad can stand on its own, it can also be used to make other dishes pop. We used it on avocado toast and it was delicious!

avocado toast; multigrain bread, baby arugula salad, avocado, butter, everything but the bagel sesame seasoning.
